- Hang deer from hind legs
- Make a circular cut on the front leg around each elbow joint.
- Make a cut from the front leg elbow to stomach opening. Carefully follow the hair pattern where the white and brown hair meet on front leg.
DO NOT CUT ACROSS THROUGH THE BRISKET AREA!
- Make a circular cut around the stomach area at least 6" behind front legs.
- Roll the cape down neck as far as possible toward the neck-head junction and cut off head by sawing throught the vertebrae.
